Apple and Raisin Muffins
2 local organic apples, grated
100g oat bran
200g + 1 tbsp organic flour
2tsp baking powder
1tbsp organic honey
20cl organic grass fed milk
2 organic eggs
125g organic grass fed butter, melted
Preheat the oven at 400F. Coat the raisins with a tbsp of flour.
In a bowl, mix flour, sugar, oat bran and baking powder. In a bigger bowl, beat the organic eggs with the milk then add the melted butter and the honey. Add the dry ingredients and stir until combined (not too much otherwise the muffins will end up too dense). Fold in the local organic apples and the raisins.
Fill up your muffin tins (3/4 full) and bake for 20 minutes, or until a toothpick inserted into the centre of a muffin comes out clean.
