Apple Christmas Cookies
1 cup organic grass fed butter
1/2 cup icing sugar
1/2 tsp salt
1 tsp cinnamon
2 cups organic flour
2 local organic apples, finely diced
1 tbsp organic grass fed butter
2 tbsp organic maple syrup
2 tbsp water
In a bowl, cream the organic grass fed butter and the icing sugar. Add salt, organic flour and cinnamon until combined. Chill the dough for at least 30 minutes.
In a pan over medium heat, melt the organic grass fed butter. Add local organic apples, maple syrup and water. Allow to simmer for a few minutes.
Preheat oven to 350F.
Shape the dough into balls. Place on a cookie sheet. With thumb, dent each cookie. Put apples in each thumbprint. Bake for 15 to 18 minutes.
Yield: 4 servings.
