Rutabaga, Apple and Maple Syrup Soup

Rutabaga Soup

Ingredients:

2 rutabagas

2 apples

3 potatoes

3 carrots

1/4 cup maple syrup

Salt, pepper and cayenne to taste

Preparation:

Peel and dice all the vegetables.

Add them to a large sauce pan. Cover with water or vegetable stock. Bring to a boil, reduce the heat and  simmer until tender, around 25 minutes.

Blend it until smooth. Strain. Add maple syrup, salt, pepper and cayenne pepper.

Yield: 4 servings.

Quinoa Apple Cake

Quinoa Apple Cake

Ingredients:

2 apples

1 1/2 cup quinoa, cooked, unsalted

1 cup almond flour

1 cup almond milk

2 eggs

4 tbsp honey

1 tsp baking powder

1/2 tsp cinnamon

1 tbsp coconut oil

1 pinch of salt

Preparation:

Cook quinoa in unsalted water.

Preheat oven to 350F. Grease a baking dish with the coconut oil or/and

Cut apple in dice. Keep a few slices for decoration (optional).

In a large bowl, mix cooked quinoa with apple, almond flour, almond milk, eggs, honey, baking powder, cinnamon and salt.

Pour the batter onto the prepared baking dish. Arrange the apple slices on top.

Bake for 45 minutes to 1 hour.

Yield: 6 to 8 servings.

Vegan Apples Pancakes

Vegan Apple Pancakes

Ingredients:

1 cup almond milk

1 1/2 tbsp baking powder

2 tbsp sugar

1/8 tsp salt

1 cup flour

2 tbsp coconut oil

1 tbsp apple cider vinegar

2 apples, peeled and diced

Preparation:

Whisk almond milk and apple cider vinegar together. Let it sit for 5 to 10 minutes.

In a large bowl, stir flour, baking powder, salt and sugar. Add milk mixture. Whisk until just combined.

Heat a large non-stick pan over medium heat. Add a little bit of coconut oil and a few dice of apple. Ladle batter on the apples, making pancakes of any size you like. Adjust heat if necessary. Flip pancakes after bubbles rise to surface and bottoms brown, after 2 to 4 minutes. Cook until second side is lightly browned. Add a little bit of coconut oil between each pancakes and repeat. Serve warm, or hold on an ovenproof plate in a 200-degree oven for up to 15 minutes.

Yield: 6 to 8 pancakes.

Apple and maple sirup Christmas Cookies

Ingredients:

Cookies:

1 cup butter

1/2 cup icing sugar

1/2 tsp salt

1 tsp cinnamon

2 cups flour

Apples:

2 apples, finely diced

1 tbsp butter

2 tbsp maple syrup

2 tbsp water

Preparation:

In a bowl, cream the butter and the icing sugar. Add salt, flour and cinnamon until combined. Chill the dough for at least 30 minutes.

In a pan over medium heat, melt the butter. Add apples, maple syrup and water. Allow to simmer for a few minutes.

Preheat oven to 350F.

Shape the dough into balls. Place on a cookie sheet. With thumb, dent each cookie. Put apples in each thumbprint. Bake for 15 to 18 minutes.

Yield: 4 servings.

Maple syrup and Apple Crumble

Ingredients:

4 apples, peeled and sliced

1/2 cup quick oat

1/2 cup almond flour

1/2 cup maple syrup

2 tbsp olive oil

1/2 tsp cinnamon 

Nutmeg to taste

Preparation:

Preheat the oven at 300F. 

In a bowl, mixed the apple with the spices and drizzle with a little bit of maple syrup. In another bowl, combine oat, almond flour, olive oil and the rest of maple syrup.

Fill up a baking dish with the apple mixture and sprinkle with the oat mixture. Bake for 45 minutes.

Yield: 4 servings.

Apple and Raisin Muffins

Ingredients:

2 apples, grated

100g oat bran

200g + 1 tbsp flour

2tsp baking powder

100g sugar

1tbsp honey

100g raisins

20cl milk

2 eggs

125g butter, melted 

Preparation:

Preheat the oven at 400F. Coat the raisins with a tbsp of flour.

In a bowl, mix flour, sugar, oat bran and baking powder. In a bigger bowl, beat the eggs with the milk then add the melted butter and the honey. Add the dry ingredients and stir until combined (not too much otherwise the muffins will end up too dense). Fold in the apples and the raisins.

Fill up your muffin tins (3/4 full) and bake for 20 minutes, or until a toothpick inserted into the centre of a muffin comes out clean.

Upside-down Apple Cake

Ingredients:

Cake:

150 gr flour

100 gr sugar

10 cl milk

3 tbsp melted butter

2 eggs

2 tsp baking powder

Apples:

60 gr butter

6 apples, peeled and cut in 4

100 gr sugar

Preparation:

Melt the butter and sugar in a pan. Add the apples. Let caramelize for 30 minutes, turning them once in a while.

Make the cake batter. Mix the eggs and sugar until it become lighter. Add the rest of the ingredients and mix well. Let it rest for at least 15 minutes.

Preheat the oven at 350F.

When the apples are cooked, put the apples, butter and sugar mixture in a buttered cake pan. Add the cake batter on top. Cook for 30 minutes. Remove from the pan when it still hot.

Yield: 6 servings.
