Mediterranean Braised Celery
1 bunch of celery
10 cherry tomatoes
4 tbsp olive oil
4 garlic cloves not peeled and smashed
1 bay leaf
1tsp of sugar
3 tbsp black olives
300ml white wine (or veggie broth)
Salt and pepper, to taste
Preheat the oven at 350F
Cut the celery and remove the leaves. Wash and cut in half lengthwise, if needed.
In an oven proof pan, warm up the olive oil, add the celery, the garlic, the tomatoes, the garlic and the bay leaf. Cook for 3 to 5 minutes. Add the sugar, the olives and the wine (or veggie broth). Cover and put in the oven for 45 minutes to one hour. Take off the lid and cook for an other 15 minutes.
Serve cooled down with shaved Parmesan cheese.
