Dairy Free Apple Bundt Cake
3 local organic apples, peeled and diced
1 cup coconut oil (cold) + extra for the tin
3/4 cup sugar
1 1/2 cup organic whole wheat flour
5 organic eggs
1 tsp baking powder
1 tsp cinnamon
Preheat oven to 350F. Grease a bundt tin with the coconut oil.
Mix apples with 1 tsp sugar and cinnamon. Set aside.
Whip sugar with coconut oil until fluffy.
Add organic eggs, one at a time.
Mix flour and baking powder.
Spread half of the batter into the tin, add the local organic apples, then add the rest of the batter.
Bake for 30 to 45 minutes.
Yield: 8 persons.
