Rhubarb Water

Organivores Rhubarb Water

Ingredients: 

 

1L water

2 stalks rhubarb, sliced

2 tbsp honey

 

Preparation:

Bring water, rhubarb and honey to a boil. Reduce heat and let simmer for 20 minutes.

Refrigerate for a few hours or overnight.

Strain.

Drink the rhubarb water alone or with a little bit of sparkling water or use it for cocktail or and keep the rhubarb compote for breakfast or dessert ;)

Rhubarb, Apple, Almond Cake

Ingredients: 

1 cup almond milk

1 tsp apple cider vinegar

1/2 cup honey

1/2 cup canola oil

2 eggs

1 cup flour

1 cup almond flour

1 tsp baking powder

1 pinch salt

2 stalks rhubarb, diced

2 apples, peeled and diced

1 tbsp sliced almond

Preparation:

Preheat the oven to 350F.

Mix vinegar into almond milk and set aside.  

Mix together oil and honey. Add eggs. Add in almond milk mixture.

Add flours, salt and baking powder and mix just until combined.  If you’re using an electric or stand mixer, fold the rhubarb and apple in by hand.

Pour the batter into a greased pan. Sprinkle almond on top. Place the pan on the middle rack in the hot oven. Bake for 45 minutes. It’s done when the top is lightly brown and a cake tester comes out clean. 

Yield: 6-8 servings.
