 Peach Tart

Organivores Peach Tart Recipe



250g flour

125g butter, cubed

1 tsp salt

40g sugar

12,5 cl cold water


2 peaches, sliced

1/3 cup almond flour

2 eggs

1/3 cup sugar

1/2 cup whipping cream


In a large bowl, combine butter, flour, sugar and salt with a wooden spoon, your fingers or a pastry blender (or pulse in a food processor) until the mixture resembles fine sand. While mixing, add the water slowly until the dough forms a ball. Chill, wrapped in plastic wrap, at least 2 hours.

Preheat oven to 410F.

Roll the dough on a highly floured surface into a circle. Drape the dough over the rolling pin, then carefully unroll it over the dish, gently pressing it into the bottom and sides. Cut off the excess pastry and prick a few holes in the dough with a fork.

Sprinkle the dough with almond flour. Arrange the peach slices across the top in a pattern. Whisk eggs, sugar and cream and add it on top of the peaches.

Bake for 30 minutes.
